Chilly weather calls for bean stew

You all don't know this but I'm pescatarian. I haven't eaten chicken or meat in six months. Not eating meat has been wonderful! I thought it would be harder on a day to day basis but it's actually quite easy. I've always been a lover of vegetables and fruits. So I've been stocking up on salads and carbs (which maybe I should restrict a bit, but a nice hot piece of bread is SO appealing!)

The only thing that sucks sometimes is when it's chilly outside, I usually crave soup. My parents being the Colombians that they are love soup so they have soup pretty much everyday. But their soups primarily made of meat to give it extra flavor. 

So the only soup I know how to make so far that tastes wonderful is a bean stew. Just thinking about this soup makes my mouth water. 


To make this soup you'll need:

  • 1 can of black beans (drained and rinsed!)
  • 1 can of kidney beans (drained and rinsed!)
  • 1 diced yellow onion
  • 1 can diced tomatoes
  • couple of potatoes (I used four small red potatoes) 
  • 2 plantains
  • 2 ears of corn

When I make this stew I like having everything "mise en place" or ready. First things first dice up one yellow onion. Drain your beans, I use two types -kidney and black beans. Cut a couple of potatoes and plantains. For the plantains I cut off the top and then cut the skin vertically to be able to break off pieces with my hands. I like the rustic shape plantain gets, I don't like when it's diced or sliced. Also prep your corn by slicing the kernels off the cobs.


Once you have everything ready add some olive oil to a pot over low heat. Sauté the diced yellow onions. Once the onions have soften up a bit add one can of diced tomatoes. Allow the diced tomatoes to cook down a bit. Then add the drained cans of beans, corn, diced potatoes and plantain. Lastly add four cups of water and season with salt and pepper and some turmeric. Let this cook over low to medium heat for about twenty minutes. 


While your stew is cooking you can make a salsa topping.

To make the salsa topping you will need:

  • 1 tomato (diced)
  • handful of cilantro
  • 2 scallions
  • The juice of 1 lemon or lime
  • pinch of salt and peppe

Cut up some scallions, tomatoes and cilantro. Add some lime juice and salt and pepper and you have a delicious topping. Try not to eat your salsa with chips as you wait for your food to finish. This is always hard to do since who can really stay away from salsa and chips?!


Alright once the stew is ready grab a plate and serve yourself. Make sure to add some salsa on the top. Have a taste and if you want add another squeeze of lemon on top. Hope you enjoy!
