Mango salad

I recently found two vegan youtubers- Hot for Food and EdgyVeg and became super inspired to get creative in the kitchen. They have awesome videos that show you that being vegan does not have to mean just having smoothies and salads (disclaimer I totally love me some smoothies and salads, but mixing things up is always good!). Being vegan should not be frustrating, when it comes to figuring out what to eat. Instead you should be excited about all of the creativity you are going to experience! After watching some of their videos I went to the supermarket and bought some vegan mock meat and will be making some awesome recipes for you guys! I'll do a taste test maybe and let you know about the vegan goodies I picked up.


Anyways here's a delicious mango salad that is super quick and easy to make. To make it you will need:

  • 3 romaine lettuce leaves
  • 2 Yellow mangoes
  •  1 red onion (to get rid of the bitter taste put in a bowl of hot water with some salt and then drain)
  • bunch of cilantro
  • bunch of mini carrots (julienned)
  • 1 cucumber (julienned)
  • a couple of scallions (chopped)
  • 1 tomato sliced


  • dash of chili pepper (optional but gives the salad a nice kick)
  • salt and pepper
  • 1 juiced lemon 

Cut up the romaine lettuce in half, or you can dice it but I like the idea of having the lettuce as a bed for the rest of the salad. Once you have all of the ingredients cut up, you can toss it all together with the dressing. And dig in!
